Is that (a) a 3½ inch cube? or (b) 3 x ½ inch cubes?
If (a) then I would probably use a large hook (size 4 or 2 at least) with a longish Hair rig with a length of Biro tube threaded onto the hair to prevent the hair from cutting through the meat so easily and a lage flat meat-stop to prevent the meat from slipping off the end of the hair.
If (b) then I would probably just mount them on a hair as normal and use a size 8 or 10 hook.
NB. I have never used a chunk of luncheanmeat larger than around an inch & a half in size anyway.
